Savoury pancake pizza/ Dhirde pizza

My daughter refused milk till she was almost 21 months old. Her ped asked me to include other dairy options(yogurt, cheese, buttermilk) into her diet to make up for the calcium she was missing.
The loyal cup of milk that I gave my son everyday from the age of 1 till now to satiate the early morning hunger pangs, vanished into thin air. And I was left lurking in the dark trying to find a solution for a quick healthy start to her day. On those days, when I was too lazy to think ahead and keep part of it ready the night before, I used to be completely lost, clueless as to what should I serve her while she pranced and danced around my feet making it impossible for me to move around, check the staples or even think. This pancake pizza was born on one such crazy morning.
I really did not measure the flours then as I was in a hurry and just mixed the ingredients that came into my mind. But I am trying to put some here just to give a rough idea of the proportions, I used. A mom always knows the best combination for her kid, so you can adjust them according to your child's preferences.

Rice flour - 4-5 tbsps
Whole wheat flour - 2 tbsps
Chickpea flour - 1 tbsp
Urad flour - 1 tbsp
Garlic - 1 clove grated
Ginger - 1/2 inch grated
coriander leaves chopped
turmeric,
Salt, chili powder to taste
Yogurt - 2 tbsps.
Ajwain seeds - a pinch
Carrot sliced
broccoli chopped


Mix the above ingredients into a batter. Boil/steam some veggies like carrot or broccoli,a s per you liking. Heat a griddle and once hot pour a ladleful of batter and swirl around the pan/ griddle in a circular motion to spread the batter. Dot with a li'l butter or oil/ clarified butter and cover. After about 1/2 a minute spread grated cheese and top with steamed veggies. Let the cheese melt and the pancake pizza is ready. Do not forget to take a picture of that cute smile when she sees this.

You can also add thinly julienne spinach to the batter. The possibilities are endless. Nowadays I also add chopped onion and 1 egg to the batter along with a pinch of baking soda to make an actual savory pancake.
